Shrimp Fried Vermicelli Recipe

Material:
150 g dry vermicelli
3 cloves of garlic, finely chopped
2 tablespoons ebi, soaked in hot water, finely crushed
10 medium peeled prawns
10 small fish balls
50 g carrots, thinly sliced long
2 spring onions, roughly chopped
5 strands of mustard greens, coarsely sliced
2 tbsp soy sauce
3 tbsp oyster sauce
1 tbsp powdered chicken stock
1/2 tsp ground pepper
1 tsp salt
100 ml broth

How to cook:

  • Boil or steep the vermicelli in boiling water until soft then drain.
  • Heat oil in a frying pan, saute the garlic until yellow and fragrant.
  • Add the pounded ebi, shrimp and fish balls. Stir until fragrant and the shrimp are reddish.
  • Add carrots and spring onions, stir until wilted.
  • Add vermicelli, soy sauce, oyster sauce, stock powder, pepper and salt. Stir quickly until evenly mixed.
  • Add mustard greens and stock, stir until mustard greens wilt. Turn off the heat.
  • Top with the filled omelet and serve.
